When in doubt boil some noodles!
So it happens that I love noodles, who doesn’t?
It will take you 15 minutes to make this recipe, it tastes heavenly and it’s fairly healthy.
STEP ONE:
Put water into a big pan, salt it and put 2 tbs olive oil in it; then bring it to a boil.
Put 3 rolls of noodles into the boiling water and let it cook for 5-7 minutes or until ready.
(taste them from time to time and don’t let them get to soft).
Rinse them and drizzle with sesame oil.
STEP TWO:
3 rolls of noodles
6 – 7 mushrooms cut into slices
1 bunch asparagus
(remove 1 inch from ends and cut into halves)
7 – 8 small peppers cut into slices
1/2 red onio cut into slices
1/2 chicken breast cut into small cubes
pink salt &pepper
sesame oil
grape seed oil
olive oil
soy sauce
Heat a frying pan (wok if you have one) on medium-high heat
Coat the pan with 1-2 tbs olive oil.
Put the chicken cubes into the pan.
Fry them until their color change to light golden (about 4-5 minutes).
Add all the veggies into the pan.
Mix the chicken and the veggies together.
Season with salt & pepper.
Drizzle the meat and veggies with 2 tbs grape seed oil and 2 tbs sesame oil.
Cook them until veggies get softer, but are still crisp.
Ready to put the noodles in? Drizzle the meat and veggies with 2-3 tbs soy sauce.
In they go! Mix well…put some more soy sauce or not… I did ’cause I’m all for soy sauce.
