Poached Eggs in Tomato Sauce

Bored of simple sunny side up eggs?

Take it up another notch!

You need:

 

3 eggs

1 can of  tomato sauce

1 garlic clove

2 green onions

1/4 of a small white onion

1/4 cup chopped parsley

basil

1/4 cup country style ham (optional)

pink salt & black pepper

1/2 bay leaf

3 slices of toast

2 tbs olive oil

1 – 2 tbs sugar

Chop the garlic, onions and the ham in small pieces.

Saute them for 2 minutes in olive oil.

Add the tomato sauce and season with salt & pepper.

Add the bay leaf and the sugar, and let it cook for 10 minutes on medium low heat.

Add the parsley and the basil and mix well.

Crack the eggs into the tomato sauce.

Cover with a lid and let it cook for another 10 minutes on low heat.

Make sure the tomato sauce is not runny…

Place the eggs with some sauce on toast and
