1/2 red onion sliced
8 cherry tomatoes
1 potato peeled cut in small cubes
3 – 4 crushed garlic cloves unpeeled
4 – 5 small peppers cut into halves
10 asparagus spears cut into halves
1/2 zucchini cut into small cubes
10 baby carrots cut into halves
1 tbs olive oil
pink salt & black pepper
1/3 tbs chili flakes
Put the veggies mixed with the spices in an oven resistant pan and cover them with aluminium foil.
Roast the veggies at 380 F for 20 minutes.
Remove the aluminium foil and bake them at 400 F for another 10 – 15 minutes.
Enjoy with feta cheese, goat cheese or a steak.
