Rainbow Trout Roasted in Vine-Tomatoes and Basil Marinade

I love fish, I love tomatoes and I love basil so…




2 rainbow trouts (all bones and inside removed)

4 vine-tomatoes

3 garlic cloves crushed

6 tbs basil

pink salt & pepper

3 tbs extra virgin olive oil




Cut the tomatoes in small cubes and mix with the rest of the ingredients.

Cover a cookie sheet with parchment paper and put the fish in it.

Cover the fish with the tomato – basil marinade and place an aluminium foil over the cookie sheet.

Let the fish marinade for 30 minutes – 1 hour. (in the fridge, of course)

Using a tooth pick, pierce the aluminium foil a couple of times and place the fish into the oven for 20 minutes at 370 F. (make sure you don’t overcook it).




and I roasted some veggies to go with the fish…and made polenta.
