Spicy Veggie Soup

For Romanian press 2.

 

1 broccoli floret
1 sweet onion
1 zucchini
1 parsnip
 3 carrots
2 peppers
chili flakes 
sea salt
pepper
rosemary
basil
oregano
parmesan
(or blue cheese…)
sour cream
some more chili flakes
3 tbs extra virgin olive oil

 

First I roasted the seasoned veggies in the oven (390F) for about 20 minutes (the pan covered with aluminium foil).
Then I boiled the veggies in 2 cups water for another 20 mintues.
Then I blended the soup together with the parmesan cheese and the sour cream (add as much as you like).
