Warm Kale Salad

 

 

 

 

Ok, so I decide to go vegetarian for one month and see how that goes! I’ve tried it before for about four months, without planning it or really trying to stick to it (to my mother’s irritation because I refused to eat her Easter dishes) and I felt great so we’ll see…

INGREDIENTS:

2 cups kale

1/2 half avocado 

3- 4 shiitake mushrooms

sundried tomatoes

pink salt & pepper

1/2 orange peeled and cut into small cubes

1/2 orange juice

extra virgin olive oil

baked tortillas with pieces of cheese, basil and chili flakes on top

 

Cut the avocado and shiitake mushrooms in small cubes and saute them lightly in olive oil.

Wash & drain the kale leaves and put them in a large bowl.

Put the orange pieces on top of the kale and then add the saute avocado and shiitake.

Season with salt & pepper, extra virgin olive oil and freshly squeezed orange juice.
