Coconut Brown Rice Pudding


For Romanian press 2.

It’s not very easy to come up with new “stuff” to eat, without meat, especially since I hate to cook just for myself!

This is something my nana used to my make for us when we were little.

I changed it a little by using soy milk and some coconut oil (this stuff is awesome, can’t get enough of it!) which was not something people would use 20 years ago in Romania.





1 cup brown jasmine rice

1/2 cup whole milk

2 cups soy milk

1/4 cup coconut flakes

1 tbs coconut oil

2 -3 drops of agave syrup


Rinse the rice with cold water and put it a sauce pan with the rest of the ingredients.

Let it simmer  on very low heat (3 for electric stoves) for about 30 minutes.

I didn’t pay much attention to what time it was, but when the rice is cooked …taste it to make sure:D.

If you want the pudding to be not as much on the solid side, add some more milk.

Match it with sour cherry preserve!! Or some fresh berries!
