Eat right! Breakfast

Since I am keeping away from meat, I try to have as many veggies as possible with all my meals otherwise I get really hungry, really fast.

This recipe is the wealthy relative of this one.

 

INGREDIENTS:

1 organic large egg

(organic eggs actually taste better than regular ones… the opinion of someone who grow up with eggs from family own chickens, or you can call me GP)

2 -3 kale leaves

5- 6 brown champignon mushrooms

1 summer squash

4 – 5 asparagus spears

raw pepita seeds

2 tbs olive oil

pink salt & pepper

 

Cut the squash in small cubes, remove hard ends of the asparagus spears and cut in half and break the kale leaves in small pieces.

Heat a frying pan with 1 tbs olive oil and sautè the veggies (season them with salt & pepper).

After 3 -4 minutes, transfer the veggies on a warm plate.

Add another tbs of olive oil in the pan and fry the egg.

Put the egg over the veggies and that’s it!
