I figured I needed to add one more vegan recipe before I start cooking the traditional Romanian dishes for the Easter dinner.
Zucchini fritters are the best, but it takes some time to make them so be adviced.
INGREDIENTS:
about 5 different types of zucchini (can use same type just as well)
1 potatoe
1/2 cup chopped italian parsley
1/2 cup chopped dill
2 scallions chopped
1/2 yellow onion grated
2 garlic cloves crushed
pink salt & pepper
1 egg optional
some white flour
grapeseed oil (canola/ sunflower)
Wash the zucchini and grate them…yeah, that’s going to take some time.
Squeeze all the excess water out of the grated zucchini and place them in a large bowl.
Peel the potatoe, grate it and squeeze the excess water.
Mix the potatoe with the zucchini, choped parsley and dill, grated onion, choped scallion and egg… season with salt and pepper.
Since I completely forgot to take a picture with the fritters… you can see I also made some meat fritters.
Shape the mixture into “fritters” like in the picture above (you might need to squeeze the fritters again before frying…lot of water in zucchini).
Cover the patties lightly in white flour and fry them on both sides in just a little bit of oil.
Mission accomplished!
