This recipe is based on a traditional Romanian salad called “salată de boeuf”.
The original recipe is usually made with more than one kind of pickled veggies (cucumbers, green tomatoes, peppers, cauliflower), but since where I live I can only find pickled cucumbers I was forced to adapt.
Also, the mayonnaise is homemade, but any type of mayo will do the trick.
INGREDIENTS:
2 chicken breasts boiled (no skin)
4 white potatoes boiles
about 15 small carrots boiled
3 parsnip boiled
1 big jar of pickled cucumber
pink salt & pepper to taste
1/4 cup of mayo
Boil the veggies and the meat.
Cut everything in small pieces.
Squeeze the excess water from the pieces of cucumber.
Season to taste and combine with the mayo.
ENJOY!
This salad kind of reminds me of the Spanish “ensaladilla rusa”, that is a bit more Mediterranean let’s say – with tuna instead of chicken and olives, but this is something I’ll definitely try, also all the ingredients are easy to come by here! Thanks for sharing 😉
