2 green squash

4 ripe tomatoes

salt &pepper

extra virgin olive oil

fresh mint


4 crushed garlic cloves




Cut the squash and the tomatoes into smaller pieces, chop the mint and combine all ingredients together.




Place the veggies on a cooking sheet covered with parchment paper and roast them at higher temperature for 10- 15 minutes.

Heat a skillet, remove the veggies from the oven and sautè them on high heat for another 5 minutes.

Serve warm with goat cheese.






P.S. I am in a tomato paradise, can’t get enough of them!
