Pomegranate Bonanza

 

 

The pomegranates are in season and they’re pretty delicious, so make sure you use them in your cooking while you can.

INGREDIENTS:

1/2 pomegranate

2 tbsp goat cheese

spring mix salad

1 cucumber

pink salt & freshly ground pepper

chili flake (optional)

1 tbsp extra virgin olive oil

1 tbsp balsamic vinegar

Chop the cucumber in small pieces.

Cut the pomegranate in half and remove the seeds.

Crumble the goat cheese and assemble the salad.

Enjoy!

P.S. It’ a great side dish for grilled chicken breast.
