The perfect asparagus


Well, Thanksgiving it’s history already! Time flies, soon will wake up in 2016! Don’t get me wrong I’m not excited at all, I am always very nostalgic during this time of the year… I have the Holidays Nostalgia.

I made this very simple recipe a few weeks ago (the weather was still nice and we were able to eat outside) and well.. the asparagus was a hit! Did you know that: “Asparagus is a very good source of fiber, folate, vitamins A, C, E and K, as well as chromium, a trace mineral that enhances the ability of insulin to transport glucose from the bloodstream into cells.” (wiki)? More reasons to find the perfect recipe to cook this veggie that needs a little bit of attention to bring out the best of it.

You need:


sea salt & fresh ground pepper

olive oil


parchment paper


perfect asparagus

First it’s first, wash the asparagus and trim 1 inch of the ends. Heat a cast iron pan, drizzle some olive oil and add the asparagus. Season with sea salt and fresh ground pepper and give it a few shakes while you cook it for 3-4 minutes on medium heat.

Cover an cookie sheet with parchment paper, transfer the asparagus and cover in grated parmesan cheese. Bake for 3-4 minutes at 375F. Perfection!

I also prepared some orzo and couscous to serve with the asparagus and added a pork sausage for meat lovers.
